This easy vegan pancake recipe can be doubled easily to feed more people.
(Makes about 8 large pancakes)
In a large mixing bowl, whisk soy milk and oil together. Add flour, sugar, baking powder, egg replacer, and salt. Stir just until large lumps disappear.
Cook pancakes on a hot cast iron griddle or other non-stick surface immediately.
(This recipe used to advocate mixing the egg replacer in a small bowl with 1tsp of water and then folding it in, but experience has shown that to be extraneous. It can be made without the egg replacer and it works fine too.
