This easy vegan pancake recipe can be doubled easily to feed more people.

(Makes about 8 large pancakes)

In a large mixing bowl, whisk soy milk and oil together. Add flour, sugar, baking powder, and salt. Stir just until large lumps disappear. In a small bowl, beat egg replacer and water together with a fork until well mixed. Fold egg replacer and water mixture into batter.

Cook pancakes on a hot non-stick griddle immediately.
