Mornay Sauce

butter
3 tablespoons
flour
2 cups
milk
to taste
salt
to taste
white pepper (fresh ground)
1 pinch
nutmeg (fresh ground)
1/2 cup
Parmigiano cheese (fresh grated)
In a saucepan over low heat, melt the butter.
Stir in the flour and cook for 2 minutes.
Whisk in milk, 1/2 cup at a time, until smooth.
Season with salt, pepper, and nutmeg.
Cook, stirring constantly for 4 to 6 minutes.
Remove from heat and whisk in cheese.
Serve warm.
NOTES:
You can also do this with 4 oz. goat cheese in place of the parmigiano cheese.
